- 28 oz can diced tomatoes with juices
- 4 cups baby spinach
- ¼ cup fresh parsley or cilantro
- Salt & pepper, to taste
Instructions
- Heat the Skillet: Heat olive oil in a large skillet or wok. Add chorizo, onion, and garlic. Brown chorizo over high heat for about 5 minutes.
- Add Chickpeas and Tomatoes: Add chickpeas and diced tomatoes with juices. Bring to a boil, then simmer for 10-15 minutes until the sauce thickens.
- Season and Add Greens: Season with salt and pepper. Stir in spinach and parsley until wilted. Remove from heat and garnish with parsley or green onions.
