  • 4 cups baby spinach

  • Salt & pepper, to taste

Instructions

  2. Add Chickpeas and Tomatoes: Add chickpeas and diced tomatoes with juices. Bring to a boil, then simmer for 10-15 minutes until the sauce thickens.
  3. Season and Add Greens: Season with salt and pepper. Stir in spinach and parsley until wilted. Remove from heat and garnish with parsley or green onions.
